Shaping A New Age of Wagyu
At the 2024 Australian Wagyu Association WagyuEdge Conference, I was invited to speak as a future industry leader, presenting on the Ausgyu Wagyu operation and my vision for the future of the breed.

This was my first formal public speaking engagement and a defining professional moment.
​
In that presentation, I introduced what would become a central pillar of my work: a deliberate and data supported emphasis on flavour profile as the ultimate benchmark of breeding success. Beyond marbling score alone, I spoke about fineness, fat quality, maternal influence, and the responsibility breeders carry in shaping consumer experience through genetic decisions made years before harvest.

Using Ausgyu as a case study, I outlined how structured selection, transparency, and long term breeding accountability are essential to protecting the global Wagyu label. I challenged the audience to think beyond short term metrics and to consider the longevity, integrity, and profitability of the breed as a collective responsibility.

That stage marked the beginning of a more public chapter in my work, advocating for clarity, collaboration, and a consumer first philosophy that places flavour, not fashion, at the centre of Wagyu’s future.
